Meatballs
This seems to be the crowd favorite of different meatball recipes I've tried out. It's easy, not messy, and hasn't brought any complaints... yet.
Prep two large baking sheets lined with foil. (Saves time on cleanup). On top of the foil place two oven safe cooling racks. This will help keep the meat out of a grease puddle while cooking. Set your oven on Broil High.
Combine your meat, and all ingredients into a large mixing bowl. After thoroughly mixing ingredients by hand, get ready to roll some meatballs. I like to coat the palms of my hands with olive oil throughout this process to keep the meat from sticking to my hands. Roll them to whatever size you prefer and place them on top of the cooling racks.
On a lower middle shelf place your full baking sheets into the oven once it's reached temp. Broil for 5-8 minutes, remove from oven, and let cool. You're done, good job, enjoy!
I like cooking meatballs this way, with the cooling racks because the excess grease drips off the meat. Plus, instead of sending a bunch of grease down your kitchen sink pipes (which causes clogs) you just wait until the grease hardens on the foil, and toss it in the garbage. Now you just need to wash 3 items instead of scrubbing baking sheets, which sucks.
